Just as breads vary in shape, size, and flavour, so too do the Old World’s cheeses. The Empire, especially in the north, produces pungent cheeses with curious odours, while the Bretonnians and Westerners seem to prefer soft, mild cheeses. Shelzen cheese is rich with blue veins and has a unique flavour from the mould inside, while Estalian cheddar is sharp and famed throughout the Old World. Poor quality cheese is vile, either dried out and rubbery, or so far eaten by mould it’s lethal to eat.[1a][1b]
