Held on the first of Brew-Month, Cave Day is when wheels of aged cheese are rolled out from the many limestone caverns that dot the area. It is a busy yet festive time, with those townsfolk involved in the making of cheese spending their time getting the new product ready for eating or shipment to other lands. It is tradition for the largest wheel to be rolled into the River Aver as an offering to its minor god, Altaver. The locals say that the river God's blessing is responsible for their cheeses’ distinct flavour.[1a]
