Headtaker is a fairly decent skaven novel, it's about (you guessed it) Queek Headtaker. I've heard Ulrika is a decent vampire story too
Yeah, Ulrika is featured in Gotrek & Felix too, where she gains her vampirism at some point. Gotrek & Felix come across her and other vampires every now and then (including Mannfred himself) so that provides some interesting stories too.
Then you've the Undeath Ascendance omnibus which came out recently and contains multiple Vampiric stories like The Red Duke, Ancient Blood and Curse of the Necrach. Ulrika got her own omnibus as well by the way. Aside from that I'd definitely go for the Vampire Wars omnibus.
My biggest warning about Ulrika is that the books are great in all the background they give, but the protagonist is a bit daft, which even the characters in the book admit. As such I found little enjoyment in her journey.
Still, the books are invaluable just to learn and come to grips with vampires and how they operate on the daily scale.
For something bigger on the Vampire front my recommendation would be the Blood of Nagash books, which are largely about the early history of vampires after the fall of Lahmia, leading up to the (disputed) destruction of Mourkhain.
For Skaven I would put my money behind the Black Plague books, as I always recommend them and they include a lot of cool details. Of note here: massive dramatic Skaven politics around the council of thirteen, how a skaven clan is destroyed etc.
On the Nurgle-front I can't really help, as I've read about a singular book from a Nurglitr perspective, and that was in the grim dark future of the 41st millennium, so little relevancy here.
Read the Mathias Thulmann Trilogy, you get a little of everything.
The von carstein trilogy is a great set for vampires with the first one being the best. The thulman omnibus is good to for the way it goes into vamps
